These are an easy, delicious & healthy breakfast or lunch grab and go. They are also really fun for kids because they can choose there own ingredients for there egg muffins. Don’t be afraid to add some tasty spices into these egg muffins as well to give it that extra tasty factor. Enjoy!!

Ingredients

  • 1- 32oz carton organic egg whites
  • 1-large handful of fresh organic spinach, washed & rough chopped
  • 1-small organic yellow onion, small diced
  • 1-Tbsp Olive Oil
  • *you will need a muffin tin for this recipe

Instructions

DIRECTIONS:

-Heat up olive oil in skillet & sauté onions until soft (over medium heat).

-Put cooked onions into glass bowl and add spinach and salt to taste and stir well.

-Add Egg whites into bowl and mix well again.

-Spray muffin tin with avocado spray (or whichever spray you prefer).

-Fill each muffin cup 3/4 c full leaving room for it to cook up.

-Bake for 20 minutes or until firmly set
